The hardest part is boiling water.
Beets are in season, and there are endless reasons to eat them. That bright red pigment is nature’s way of telling you that beets contain loads of vitamins, minerals and antioxidants that can ward off sickness, reduce blood pressure, and assist in flushing toxins from our liver. Even the greens are full of iron and can be chopped into a salad or sautéed in olive oil.
I tend to look for beets that are small to medium in size. As they grow, the beets lose some of their sweeter flavors and taste a bit earthier. The small to medium beets also cook faster for a family looking to save some time.

- 4 large red beets (or 5-6 smalls beets)
- 2 large golden beets
- 4 oz soft goat cheese
- The juice of ½ orange
- 1 tablespoon balsamic vinegar
- Chives, small dice
- Crackers or baguette slices (Note - we used gluten free crackers in this recipe)
- Chop off the beet greens and tips.
- Place beets, skins in tact, in a pot and cover with cold water. Bring up to a simmer and then turn on low-med heat and cook for 25-30 minutes. Test with a small knife for desired doneness.
- While beets are cooking, juice half an orange and chop the chives.
- Drain beets and allow cooling until easy to handle. With a small knife, peel off the skin of the beets.
- Place red beets, goat cheese, orange juice, and vinegar in a blender and blend until smooth. Add salt for desired taste.
- Cut the golden beets into discs and then cut into small cubes. You can toss in a little olive oil and salt.
- To assemble - place a dollop of the red beet puree on the end of your cracker/baguette slice; top with 2-3 yellow beet cubes; sprinkle diced green chives on top.

Beets are sweet! But with that natural sweetness, your child will get the added benefit of fiber that’s packed into beets: just a 1/2 cup of cooked beets provides 2.5 grams of fiber.
They also turn everyday foods a really cool reddish-pink color when puréed and added to your favorite risotto, a morning smoothie, or a chocolate brownie recipe.
Afraid of Stains?
Afraid of staining your hands and everything else after touching the cooked beets? Not to worry, there’s always a simple solution.
- If you have a pair of dishwashing gloves on hand, you’re in business. Put them on before you pick up your cooked beets to peel them.
- Another option is to set up your cutting board and knife close to the kitchen sink. Have cold water running and peel them under the cold water!
